What is Whole Plant Cooking?
The Side Yard Farm grows crops that thrive in small spaces, opening up a world of deliciousness in the forgotten stems, flowers, seeds, leaves and buds. Stacey Givens is a an urban farmer and chef whose lifelong curiosity about the foods around her led her to bring together traditional subsistence with culinary artistry.
Some Examples of Whole Plant Utilization:
- Nasturtiums: Pickle the seeds to make capers//flowers for garnish//leaves for ‘wasabi’ or wraps
- Lovage Stems: Dry out the long, thick stems & use in the smoker
- Fig Leaves: Flavor syrups//Dry, grind & mix with sugar to use for baking//Wrap leaves around proteins or dolmas
